I wanted something that tasted like Resaurant Tortilla soup and this is very close. I just make it on the stove. and make is very simple and it tastes great. boil chicken breast in sauce and then shred. I add black beans and use diced tomatoes with chiles. My family loves this dish!

We had our first snow here today, and this was the perfect soup for a cold day, just absolutely excellent! I didn't have corn or cilantro on hand, so I omitted those items. I replaced with one can of pinto beans and one can of white hominy. I did precook my chicken as the recipe suggested. Also, I needed it done faster so I brought everything up to a boil on stovetop, then lowered temp to simmer for one hour. We garnished with crushed tortilla chips, bagged variety, and shredded cheddar. My three year old ate his entire bowl, that's rare, and we thoroughly enjoyed it as well. It's definitely something I will make again and again, simply delish! Thank you for such a great recipe.

Excellent! We added a can of pinto beans and a can of Campbell's Nacho Cheese Soup. I would recommend sauteeing the onions first, and adding cornstarch as others suggested.

Wanted something hot on a rainy day after Thanksgiving. This was perfect! Used chopped leftover turkey, half a 14 oz can enchilada sauce, one can diced tomatoes with green chilis, omitted the cilantro because I didn't have any, and used bagged tortilla chips. Everything else in the recipe I followed. I dumped it in a pot on the stove, heated to boiling, reduced heat and simmered for about 30 min. Didn't think I needed the crock pot since everything was cooked. Really yummy! Added cheese, sour cream and a few more chips on top. Will definitely make again.

Incredible! I made three small changes...sorry. Added black beans, used one 32 oz. box of chicken stock instead of can of chicken broth, and cheated with tortilla chips instead of home made. My toppings included choice of sour cream, avocado, chopped cilantro, cheddar cheese and tortilla chips. Whole family loved it.

This soup was wonderful!! I have tried it using homemade enchilada sauce and roasting my own chilies, and it is richer as some others suggested, but for a fix it and forget it recipe this is the best! If you follow the recipe, and throw the chicken in frozen and leave it alone all day, you end up with a great soup that everyone will want seconds of! I have passed this recipe on to many friends who have raved over it! Thank you :)

Amazing! I changed it just a bit. I left the chicken raw and just diced it up finely. They were so moist when the soup was done. I used 2 boxes of broth instead of using water and broth. I added green beans along with the corn for some extra veggies, and substituted a can of lightly drained diced tomatoes for the crushed tomatoes. And finally, what made it perfect was adding a cup of cooked wild rice about 30 minutes before serving! This soup was amazing! It's not very spicy, so don't be scared!

I would have to say that this is the best recipe I have tried from this site. The only thing I really changed was I used a large can of Rotel instead of the individual cans of tomatoes and green chiles. I also took everyones suggestions and added a cup of cooked white rice right before serving as well as avacado, shredded cheddar cheese and sour cream. I think making your own tortilla strips really makes it! It was a big hit and something I will make it again and again!

This soup taste a bit acidic to me. I added a tablespoon of sugar and it helped bring out the flavor.

I followed a few of the other reviewers and just added the chicken in uncooked, I also added a can of black beans, drained and instead of frozen corn I used a can of the Trader Joe's corn. It turned out wonderful! Served with lime wedges, sour cream and shredded sharp cheddar. I am totally adding this to my basic crock pot recipe rotation! Also, I made the tortilla strips with reduced fat tortillas, a tiny bit of olive oil and some chili powder and sea salt and they turned out AMAZING!

I made this a few nights ago and it was delicious!!! I did use a 19oz can of enchilada sauce instead of 10oz, about 1.7 lbs of chicken, & the 2 cups of water I kept as is. I followed advice of another and used some corn starch at the end to thicken the soup. I made at least twice as many of the tortilla chips as we really loves these is the soup. put some chips & cheese in the bottom of a bowl, ladled the soup on top and put sour cream, more chips & lots more cheese for garnish & flavor. If you plan to use cheese & sour cream don't add too much corn starch since these will thicken the soup as well. An absolutely amazing soup, thanks!!!

Mmmmmmm...very good and so easy to make! We used crushed up tortilla chips in place of making our own strips and it turned out just fine. We'll be making this one again!

I didn't love this soup until I added sour cream, cheese, avocado, and tortillas. Once you add the unhealthy stuff, it's delicious! My husband and I aren't huge meat eaters and might have enjoyed this with less chicken. I also put my chicken in raw and shredded it after 3.5 hours.

I followed the recipe as stated, adding black beans like another reviewer suggested. Fantastic on its own! However I found an additional item that takes this recipe over the top: I broke up some Hint Of Lime tortilla chips over the soup. Oh My Word! This is the 2nd time I've made this recipe since October and it's going on the menu for my annual cookie exchange. Thanks Elena!!

This soup was delicious and super easy. I added the chicken in frozen, as suggested by others. It came out so great, and fell apart just with the touch of a fork! I chose to saute' the onions first, so they would be translucent and not crunchy in the soup. I am glad I did. I agree with the others, the the tortilla strips were a waste. The soup stands great on it's own, or with store bought chips if you must! This soup will definitely be added to our short list! YUMMY! My husband loved it!
