Try it vegetarian style (no chicken). It's probably not the same recipe as its author intended, but it's good! We've made it three times in three weeks. My family keeps asking for more. I didn't use a pressure cooker, substituted diced tomatoes (or whatever was in our pantry) for the tomatoes/chilies, and used low-sodium taco sauce. Made it once with the tomatoes and green chilies which seemed to drag down the flavor. I've used three different types of beer. Doesn't make much difference. I make sure it boils for a while so the beer taste disappears. We tried it without the beer once, but ended up adding it because it does enhance the flavor. Our version is so light and refreshing!

I usually don't review on here, but this was so good that I just had to. I've made it with and without the beer and both ways turn out delicious, especially when topped with cheese and crumbled up chips. I've made it twice now and the second time I used a can of Mexicorn and it added a lot of flavor (I had omitted corn the first time). I definitely recommend this!

One of our favorites! SO easy to prepare, just open cans and dump. Some changes I make: I do not use the beer or the tomato sauce, instead make up chicken broth with Better Than Bullion and water to replace these. Also, I use Chipotle Taco seasoning. This gives it an incredible flavor, but is sometimes hard to find. I also find that the chicken breasts can go in frozen and cook thoroughly. Throw on the cheese and chips, and it is a hearty meal!

I love anything that you can toss in a slow cooker so I decided to try this soup. I ended up adding cilantro to mine and also a little cumin & cayenne pepper. It was delicious except I did not enjoy the beer taste. My boyfriend & his friend devoured it but I think next time I will use chicken broth instead of beer. Also, I tossed in frozen chicken breasts & cooked it for almost 12 hours on low. The chicken was perfect and fell apart when I shredded it. Great soup!

Great recipe and super easy to throw together in the morning and have ready for dinner. I used frozen chicken breasts and frozen corn. I used one can rotel and one can diced tomatoes - other than that I followed the recipe to a T! The beer cooks out - you can smell it in the beginning but by the time it was done there ws no trace of the beer smell.

This soup was great! Super easy to fix and easy to modify if you need to. I didn't have canned tomatoes with chiles, so I used a can of diced tomatoes and threw in some green salsa. My husband doesn't like spicy chiles/soups, so he added some ketchup and honey to his bowl plus some shredded cheese and he LOVED it! I ate mine spicy but will compromise and probably make it with ketchup and honey in the crock pot next time. I also skipped the chili beans and only used one can of black beans, as he also doesn't like a lot of beans in his soups. Topped with sour cream, shredded cheese and crushed tortilla chips this soup was FANTASTIC! :)

I make this recipe as written, except I use chicken broth, not beer. It's excellent and it didn't make me feel like I needed to try it with beer to experience the true soup flavor, because we loved it so much without! Thanks for sharing. :)

This was delicious! With the exception of a few small changes, I followed the recipe to a T, and everyone came back for seconds (which is always a good sign, right?). The chicken was so tender, it just fell apart. My changes include: 1. Adding another chicken breast since we served a big group of people 2. Used 4oz beer, and 8 oz chicken stock 3. Added 1tsp garlic powder and 1/2 tsp cumin as per another user's suggestion. I left it in the crock pot for about 11 hours total, and loved the result. Thank you for a great recipe!

I really enjoy this recipe as fall is rolling in and its chilly outside. I was cleaning a bunch of chicken and decided to throw this together as I was actually preping for another meal on the weekend. I am enjoying it all week for lunches and easy week night dinners. We like spicy so I used chili ready beans and hot rotel tomates. Also made the recommended Bill Echols Taco Seasoning. Also Must serve with co-jack, sour cream and crushed tortillas or crackers.

I made this Sat. and we loved it! The only change I made was to use chicken broth rather than beer and I used more than 12 oz. to make it more like soup than stew. Also used one can of original Ro-Tel and one can of extra hot since we love spicy foods. I had leftover baked chicken so I shredded it and added it at the very beginning. I also added a little cilantro. The only side dish was a big pan of Mexican cornbread. This is definitely a keeper.

This recipe is a hit in my house. The only thing I changed was I used chicken broth instead of the beer. I also cooked on the stove instead of the crockpot. If you buy the chicken premade, you can prepare this in 20 minutes. One more thing... I added cilantro and a little cumin. YUM!

All these reviews...figured this had to be good. Figured WRONG!!!!!!!!!!!! My husband said it tasted like spicy minestrone with chicken. It didn't even smell good while it was cooking. I did use Bill Echols Taco Seasoning as posted by RaiainKane. Maybe that was the downfall for this recipe. That is really not how to make your typical homemade Taco Seasoning. It is quite spicy and I sure won't recommend using it if you don't like your food spicy or if you have young children. This recipe will goes into my file 13th.

I made this as a quick meal so I didn't use the slow cooker for it. I made it in a stock pot on the stove. I used every ingredient EXCEPT the beer; I used chicken stock/broth. I am not a beer drinker so I thought it would be too much for me. I added a little extra spice and two cans of chili beans....it was perfect. I used chicken tenders instead of breasts and I boiled them to prepare for the soup. Topped with some avacado, the tortilla strips, cheese and a bit of sour cream....it was great! (Oh and I read what the author of the recipe said about the seasonings...I used exactly what she had listed as they were a staple in the pantry).

I think it was just average. To be fair, I couldn't find 10.5 oz cans of tomatoes with green chilis so added both 14.5 oz. cans. To me it was a little to tomatoey (is that a word?)I used my immersion blender to chop most of them up since my husband won't eat chunks of tomato, maybe that was part of it. It seemed like it was lacking something too. I don't like to spicy either so didn't want to add much. I thought 3 chicken breasts were to much chicken also. I guess I should have gone with my gut and only used 2 and not all the tomatoes. I also didn't like the sour cream in it. I usually love it on everything so it surprised me. It did whip up quickly but I don't think I'll make it again.
