3 out of 3 of us rated this 5 stars! Put this together in 15 mins. and when we ate it, it tasted like it could have taken hours to make. I left everything exactly as written and wanted to make that homemade taco seasoning that the reviewer said but i just didn't have the time. after dishing this up, i put crunched up tortilla chips in, shredded extra sharp cheddar and a big dollop of sour cream. Made a batch of corn bread and we were in heaven. Having for lunch today! will make this often and use the beer, it's wonderful!

Very good, and so easy! I didn't add the beer, and can't say that I missed it. Did add some chicken broth as others suggested. I also didn't use taco seasoning, but instead used Cayenne, Garlic, Salt, Paprika and Cumin.

This was excellent. I was not very confident about this recipe initially because it was my first crockpot endeavor and most of the ingredients are canned, which made me fear that this was going to taste like canned soup. I also used packaged taco mix and frozen chicken breasts in this recipe. It was fast enough for me to put together between school and work (20 minutes to eat lunch and prepare dinner) and when I got home from work, the entire apartment smelled like delicious chili. I served it with tortilla chips and homemade guacamole and it was fabulous. My boyfriend liked it, too, so it is definitely going into the rotation. Perfect for a rainy day in Seattle, but I can see it shining as a summer potluck chili, too.

Excellent! I made this recipe tonight for the first time. It was delicious. My husband loved it too! I did make two changes: I substituted chichen broth for the beer, and I threw some cheese into the soup while it was cooking. With just the two of us this recipe makes way too much, so we're freezing some for later! Thank you for the wonderful soup!

I would give this recipe three and a half stars. It was good except for the beer. It gave the house a funky beer smell. Next time I will use broth.

Really good slow cooker soup recipe. Easy and very flavorful. I made mine with the beer and was pleased with the flavor and my mother made this with chicken stock instead of the beer and it came out great for her, too. Definitely a keeper. Thanks for sharing.

I didn't have time to put this in the slow cooker so I made it on the stove top. My chicken breasts were frozen so I boiled them before placing them on top of the soup mixture and I also sauteed the onions a little bit so they would be soft and also used the recipe for Bill Echol's Taco Seasoning. Otherwise I pretty much followed the recipe as written and it was delicious. Best chicken taco soup I have found.

I love this recipe. I only gave it 4 stars because of the changes I made. I used boneless/skinless chicken thighs instead of breasts because they were on sale. I used chicken broth instead of beer as well. I stuck the chicken thighs down into the mixture to cook. I cooked it for about 9 hours on low (the time i was at work), and when i came home from work, the chicken thighs were tender and juicy. I shredded the chicken, and it ended up an amazing, hearty, heathly soup.

This didn't have any flavor! I would sub chicken broth for beer, and shred the cihcken at least an hour before serving so it would absorb some more flavor. I found the flavor to be lacking and it was just missing something. I tried adding another packet of taco seasoning and it didn't help.

Excellent soup recipe! I omitted corn and added another can of beans. The taco seasoning was very good and gave the soup a nice "bite". Good with avocado and olives, as well as sour cream, cheese and tortilla chips.

After making this as the recipe states, I switched the beer out for chicken stock and added one or two more small chicken breasts. Delicious! I especially love it with the sour cream mixed in. :)

I made this for dinner tonight and my family loved it. I didn't use a slow cooker. I cooked it on the stove top for about 2 hours. This soup is delicious.

We loved this. The only thing we would change would be one can of Rotel instead of two and two cans of chili beans instead of one. It's only because most of my family doesn't like tomatoes. This is a definite keeper!

A definate keeper!! Tastes like a mild chili with chicken instead of beef...great for those who don't eat red meat! The only thing I did differently was added a 12oz. can of tomato sauce as opposed to an 8oz. can and it came out great! It was thicker than a soup would be. If you like it spicy you could jazz it up with a few more spices. Great served with corn bread. Really easy!
