Fabulous! Family chowed a double batch down. I added two cups of water as it was a bit too salty for me and one cup of chicken stock. I did use the beer as I really like to cook with it. Also increased the chicken and cut it into chunks before I cooked it.

i was very happy with this one. for chili beans, i used kidney beans...im assuming that was what was meant. definitely dont skip the beer. i used bud. doubled it for a large party, and had no leftovers. i made jalapeno cornbread to go with it. (homesteader cornbread recipe from this site w/ jalapenos added to batter.)

This was a wonderful dish and can't wait to make it again. With some of the left overs I made Nachoes. Just melted cheese over the top with a splash of sour cream. Yum!

My husband made us this soup yesterday and we *LOVED* it. He followed the recipe as written, not changing a single thing. He didn't top his with sour cream, but I did. I made homemade tortilla chips. This recipe is a keeper! *SO* easy, delicious, and cheap to make!!

This was great! Exactly how you would want it to taste! We ate it two nights in a row even, we couldn't get enough and it was even better the 2nd night! We topped it with fritos, sour cream and cheese! Yum! Thanks!

This was easy and great. I dumped all the ingredients in the crock pot and let it cook for 5 hours. Mine was done then and I didn't need for it to cook the extra two hours. I think my crock pot cooks faster than most. Easy and delicious!

I love this recipe! So easy to make and adjust to your tastes. I've done it with and without the beer, and have used different types of beer. It's good either way.

Great recipe, I used tomatoes with red peppers and onions that I jarred and kidney beans, I didn't have any beer on hand so I used chicken broth.

I used 12oz of chicken broth instead of beer. I drained only the corn and made it exactly like the recipe. It was delicious! I topped it off with sour cream, cheese and crushed tortilla chips. I won't change any part of it when I make it again, except the broth for the beer. Will make again and again!

this soup was an absolute hit at my dinner party. We do a thing called a "soup swap". It was so so good. It tended to be a little thicker like a chili. To take care of that, I imagine you would just add a bit of water or another can of tomato sauce. I garnished with fresh cilantro, sprinkle of cheddar cheese and a dollop of sour cream. Definately will be making this again!!! Even better the day after.

this was really tasty. i bought a rotisserie chicken and pulled thechicken off of it! that was really yummy! i was a little nervous to add the beer in there, but you cant even taste it. i used a bottled corona. Next time i am going to make it with the homemade taco seasonings though. i really think that will make it taste amazing! great recipe though. gotta try it!

Very tasty, filling & super-easy! I followed the recipe (used a bit less onion as that's all I had) & I used the beer (12 oz bud lite). Delicious topped with cheese, sour cream & tortilla chips. Definitely a keeper.

I took some suggestions from previous reviews, and browned the chicken in a skillet with some chili powder before putting it in the crockpot. It turned out great! I have been looking for a good, easy tortilla soup-style recipe. My boyfriend loved it! We will definitely make this again and again. Enjoy!

3 out of 3 of us rated this 5 stars! Put this together in 15 mins. and when we ate it, it tasted like it could have taken hours to make. I left everything exactly as written and wanted to make that homemade taco seasoning that the reviewer said but i just didn't have the time. after dishing this up, i put crunched up tortilla chips in, shredded extra sharp cheddar and a big dollop of sour cream. Made a batch of corn bread and we were in heaven. Having for lunch today! will make this often and use the beer, it's wonderful!

Very good, and so easy! I didn't add the beer, and can't say that I missed it. Did add some chicken broth as others suggested. I also didn't use taco seasoning, but instead used Cayenne, Garlic, Salt, Paprika and Cumin.
