We really liked this, although I found I had to adjust a few things...first, even though I used a 2.5 lb loin roast, there was not enough sauce to keep the pork moist, so I added about 1 C of chicken broth while the shredded pork was simmering on low. I also cooked on high for 5 hours, then shredded and cooked on low for 3 hours. Simmering it really helped the flavor. When I first shredded it and added the spices, it tasted like vinegar. So, the longer you can simmer it already shredded the better. I also seared my loin roast on the stove before putting it in the crockpot. This kept it moist. I served this on a hamburger bun with coleslaw on top, and it was quite a hit.

Transplanted NC family living on island in WA desperately seeking some good (great!) NC down east bar-b-que for their southern digestive systems- FOUND! This was awesome! Thanks for giving us a reasonable way of having our favorite meal again. It was so easy to make!

Coming from an eastern Tarheel and one who makes the trek from central VA straight down I-95 to Carolina for the sole purpose of purchasing BBQ, this recipe is very true to the real deal and brings back many memories of home. It's the only way to go with homestyle Carolina BBQ! This is as good as it gets.

This recipe took me back to my eastern NC roots. Very good and so easy. The only change I made was to add 1 T. of liquid smoke. That gave it the pit cooked flavor I was used to. Cole slaw and baked beans complete the perfect comfort food meal.

This was good not great. While I did enjoy the spice, I felt like it needed more of a sauce or something to cover the "pork" taste. Maybe topping with coleslaw or pickles would have helped. I only needed to cook mine on low for 9 hours before it was ready to shred.

Excellent. I serve the sauce on the side though. Simmer it on the stove for a few minutes for the flavors to blend and allow all to add as much as they like. I love it but it is a bit spicy. A really great recipe and my family loves it

I had really high hopes for this recipe but I just didn't love it. I'm not into really spicy food so I halved the spices and even then it just seemed off. However I was able to redeem the recipe by adding a touch of my favorite bbq sauce before serving on a bun and thanks to the spices it still had some heat. I plan on using the left over (w/o bbq sauce) in a black bean soup. On the bright side this recipe did yield a very tender and jucy pulled pork but just not the flavor I'm used to.

Wonderful!!! Cooked overnight, then pulled it apart in the morning, made the sauce, put it back in the slow cooker, and cooked it the remainder of the day. Overall 24 hours of cooking, and it was wonderful, juicy, and just like it is at home in NC.

My entire family loved this one. I didn't cut down on the spices as some of the other reviewers did since we like spicy foods in my family, but if you are sensitive, you might want to. We loved it just the way it is. In fact, I have already cooked up several batches of this and divided into family-sized portions, put in the FoodSaver bags, and froze. It thaws very well after being frozen and made for an awesome work-night meal. I highly recommend this one - thank you so much!

Thank goodness for this recipe. I've been looking for anything close to Carolina BBQ and I've found it and it's better than close. Thank you! My husband is from the South and he is thrilled! We live in AZ and can't get Carolina BBQ, but not anymore.

I thought that I had found my all time best pulled pork recipe when I last reviewed slow cooker pulled pork with root beer. This one has bumped it into second place. I used a boston butt a little under 5 lbs. Didn't have any cayenne so I used chipotle instead- figured it would add a little smoky taste to the mix. Also used a couple of tbls of liquid smoke. plus a little more brown sugar cause I put all of the spices into the cider vinegar up front and when I reread the directions realized my error. Any way adding a little more brown sugar and liquid smoke when I was putting shredded pork back in crock pot seemed to be just right. Cooked the pork 8 hours before it was coming off the bone correctly and then 2 more after shredding. This was so moist and flavorful with just the right amount of kick[used about 3 tbls of Louisiana hot sauce and 2 cups of sweet baby rays bbq.

Glorious!!! I love this recipe, I've made it at least 5 times now and my guests always rave about it. I love it as a sandwich; pork, coleslaw, on a King's Hawaiian roll, yum! Yes it smells a little funny cooking and yes it's not quite the same as bbq from a fire but that's the beauty of it. We all have a slow cooker, no one has a fire pit. :)

As good as BBQ can be in a slow cooker. Have tried many recipes, and a slow cooker, just doesn't add the same pizazz as a fire.

This was good, but not spectacular. I was hoping for something a little saucier. However, the pork was very tender and had a nice kick. I served it on a bun with the "Sweet Restaurant Slaw" from this site. The slaw really balanced out the flavors from the pork and made for a tasty sandwich.
