I give this 3 stars. I used taco seasoning instead of chili. Might try chili next time. The only thing I'm thinking I might do different is add the dry seasoning to the meat instead of the liquids. pameyjo

My mom use to make this as a kid and she would put hotdogs in it. It is one of my favorites. I really liked this, but my picky kids and husband did not.

My family loved this! I browned the beef with an onion and a clove of garlic. Then dumped it in the crockpot with 2 cans rotel mexican tomatoes, the olives, and 4T of homemade taco seasoning (from this site). Mixed 1c milk, the egg, and 3/4c cornmeal together and poured over the top of the meat mix. Cooked on high 2 hours, added cheese and cooked another 20 minutes. Served with a salad and sour cream. We loved this and will make it again!

I give the original recipe 2 stars. I thought it was tastless and had a weird mushy texture. But I did try it again changing a few things. I added 1/4 lb. of bacon, an onion, and chipotle peppers. Turned out much better flavor wise but I will not try again simply because of the texture.

I made a few adjustments to the recipe based on the other reviews. 1) Added onion to the ground beef; 2) Used taco seasoning instead of chili powder; 3) Used 1 c. milk and 1 c. cornmeal and didn't mix it in with the rest of the ingredients; 4) Added a can of black beans. I poured all ingredients (except the cornmeal/milk/egg mixture) into the slow cooker first. Then I layered the cornmeal mixture on top. I cooked on low setting instead of high setting for the time listed in the recipe. Turned out great! Definitely keeping this and making it often. Thanks!

My family loved this! I did do a little tweeking though, I added chopped onion and garlic to the meat and I doubled the recipe but I only used two pounds ground beef. I also stirred the chili seasoning into the meat, and I added two cans green chilis to spice it up. This recipe made so much that I mixed in the leftovers the next day with some macaroni noddles and grated up some velvetta and baked it and made a whole other casserole which was also good. I had no problem with it burning on the edges but that may have been because I doubled the recipe.

I really liked this and think my husband will too when he gets to try it out when he returns from Iraq. Just recently got a slow cooker and was looking for lots of recipes and this has turned out to be a favorite. I will use Rotel next time instead of just tomatoes and liked the chili seasoning flavor even though some mentioned using taco seasoning. My 3 year old enjoyed this very much, but he isnt a picky eater so he eats whatever I make for him.

I really liked this. I added a large garlic clove and baked at 350 for 45 minutes. I probably could have cooked it a bit longer. My husband ate it, but isn't a fan of Mexican or casseroles. My toddler didn't like it.

This looked like slop, but tasted OK. As other reviewers suggested, I cooked on LOW for 4 hours, and used a can of diced tomatoes with jalepenos and a packet of HOT chili seasoning mix in an effort to jazz it up a little, since some reviews said it was bland. Overall, this was OK when served with salsa. Not sure if I would make again, but thanks!

Definitely do NOT cook this as long as the recipe says, it will be totally dried out. The meat is cooked so simply doesn't need this much time. I made the recipe as written and only rate them if I have made them as written. I found it lacked flavor. I may try this again making the changes recommended in other reviews, but more likely I will simply look for another recipe.

This was really, really yummy! However, the people who said it may need to be cooked at a low level, or cooked for less time, are correct. There was about an hour left of cooking time when I realized that it was beginning to get crusty around the edges, so I turned the slow cooker down to low. After 15 mins. or so I realized that would not save it, so I added about 3/4 cup of milk... then it was fine. I also skipped the jalapeno pepper, but I did add hot sauce. Delicious!

As an experienced home-cook, I read all the reviews before making a new dish so I can learn other people's mishaps instead of making my own. Instead of cooking on high, COOK ON LOW for the same amount of time as written in the recipe. Since you've browned the ground beef in the skillet, it's fully-cooked. Since it's bathed in some liquid in the slow cooker, cooking on low is sufficient. Cooking on high runs the risk of drying out the meat, as some reviewers have experienced. Instead of using cornmeal, USE GROUND OATMEAL. I don't have cornmeal on hand, probably never will, but oatmeal is a healthy substitute. If you follow the rest of the recipe, you will have delicious results. We put the casserole in hard-shell tacos, topped with shredded cheese, and had happy bellies. We've put the casserole in soft tortillas but prefer the ease of crisping the tacos in the oven for 3mins at 250F instead of warming/flipping soft tortillas on the stove 15secs each.

After reading other reviews, I decided not to mix everything together. Instead, I added 1 C of flour to the cornmeal mixture along with some sugar and salt to make it more like cornbread. I added this to the bottom of my greased crockpot, then spooned the beef mixture over it. The final result was more like a pie and tasted incredible! I will definitely make it this way again.

I was in the mood for Mexican and needed to leave something in the slow-cooker. I looked this up and after reading some other reviews I modified it also. I did everything the recipe said, except I added a can of black beans, Mexican Rotel, can of green chilis, and I used taco seasoning (all I had on hand) and ground turkey. I put it on Medium instead of high. When we got home I looked at it and I thought, doesn't look so good. My husband said, "Oh my goodness this is good stuff, this recipe is a keeper!" We had a salad and corn chips to go along with it. So I guess we're keeping this one.

This was ok. Nothing out of this world, but not horrible either. I used taco seasoning rather than chili seasoning, and I added it to the beef rather than mixing it in with the other ingredients. I also cooked it on low instead of high. Even on low, it was burning around the edges after a couple hours. Probably won't make again, we just weren't crazy about it.

I used soy crumbles, and tomatoes with jalepeno peppers for more kick. Cooked on low rather than high for recommended time. DH and I both like it, but our daughter did not. DH called it a keeper. Will make again.
