1 tablespoon all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 pound boneless top round steak, cut in half
1/2 medium onion, cut into 1/4 inch slices
1/3 cup chopped celery
1 (8 ounce) can tomato sauce

DIRECTIONS
In a large resealable plastic bag, combine the flour, salt and pepper. Add beef; seal bag and shake to coat.
Place onion in a 3-qt. slow cooker coated with nonstick cooking spray. Layer with the beef, celery and tomato sauce. Cover and cook on low for 8 hours or until meat is tender.

Nutritional Analysis: 1 serving equals 272 calories, 5 g fat (2 g saturated fat), 96 mg cholesterol, 882 mg sodium, 13 g carbohydrate, 2 g fiber, 41 g protein. Diabetic Exchanges: 5 very lean meat, 2 vegetable, 1 fat.

Made this last night and it was a big hit with my family. The steak was very tender and flavorful. I made three small changes in the recipe. First, I added an additional 2tbs. of flour in the coating process. Second, I added a drizzling of Worcestershire sauce to each steak portion for a little more flavor. Lastly, I did not have to cook it the full 8 hrs. in the crockpot....I noticed that after 6 the steak was tender and done, and as it continued to cook, the sauce began to dry up...so we ate an early supper and enjoyed it very much. Will make this again.
