I made this recipe last night for my husband and I. I made 2 loaves of the meat mixture. It seemed to work fine although it was a little on the dry side. Used stove top stuffing instead of the bread. I know I will make this again but probably tweak it so it doesn't come out too dry.

I made this a few weeks ago. My wife and I loved it! I used Italian seasoned bread crumbs instead of day old bread. Flavor and texture were fantastic! Making it again today. Only thing I'll do different is to cut the carrots (I use baby carrots) in half. They were a tad firm last time. Also used Yukon gold potatoes which worked very well. Best meat loaf we've ever had! Thanks for sharing. Dennis

This came out great! Followed recipe to a tee for 4 servings w/ a few substitutions: used 1.3 lb ground pork instead of beef & Trader Joe's Masala Simmer Sauce instead of ketchup. Added parsley, granulated garlic, minced onion, creole seasoning & half way through added some water to the veggies, about 1/2 - 1 c, also topped off meatloaf w/ 2 more tablespoons of Masala sauce. Cooked 2 hours high & 6 hours low. Super moist even after 5 hours on low but wanted it cooked a bit more so kept on low for another hour. Potatoes & carrots came out great, too. Nice sauce. No joke - this barely cost $5 to make. Other than ground pork, $2.34 ($1.79/lb), & red potatoes, 5 lb bag $2.99 & only used 3 potatoes, I had everything stocked in kitchen/fridge. For pricing perspective, I live in north shore Massachusetts

The family was evenly divided on this recipe. Half liked it, half didn't. I didn't do the carrots or potatoes as none of us like the taste of the veggies cooked in the beef fat. There was something 'off' in the flavor, but I can't tell what it was. I will use my regular meatloaf recipe...two snaps up for the crockpot method though. I liked coming home to dinner being nearly done--it smelled wonderful! I took a different recipe's advice of using tinfoil as a holder. Take three equal lengths of tinfoil and place them in a star pattern. Place the molded meatloaf in the middle of the star and lift up the ends over the top of the meatloaf. Lift the entire package, place in the crock pot and then roll the foil down enough close the lid and set to low. When ready to serve, just pull up the foil all at once and the meatloaf lifts out without falling apart.

Five stars for Marna's meatloaf, just because she roasted her vegetables along with the meat in her slow-cooker and she adds green peppers and onions just like I always do. Why didn't I ever think of adding fresh vegetables?! Duh~ Thanks for posting this, Marna; I also enjoyed all the other cooks' tweeks to the original recipe. I rated Marna's recipe with ***** when I followed it exactly as written. It's delicious, so the 5 stars are for Marna! Here's how we like it: 3 changes of mine which I am happy to share: 1. I use a dry packaged Meatloaf Seasoning and follow the recipe on the package adding chopped green peppers and onions like Marna does. You'll never have a bland meat loaf with this spice mixture. Not salty like onion soup mix. 2. No ketchup or BBQ sauce on top, since anything you put on top of meat in the crock pot tends to get sweated off or rinsed off in the cooking process. I just brush or rub Kitchen Bouquet Browning Sauce all over the loaf before I place it in the pot. It makes for a beefy au jus sauce for the veggies to absorb & makes a nice, brown meat loaf, not gray looking. Good on its own w/garlic added. 3. Tomato/Beef Gravy on the side: I prepare a packaged beef gravy mix (any style, mushroom, onion, au jus, etc.) as directed (or a jar) and stir in a little can of tomato sauce (sometimes Rotel) for serving alongside our hot meat loaf dinner. It's just beefy good; only takes a minute. Also great with mushrooms added. Men especially love this!

This meatloaf was really tasty but I did change it after reading that the meatloaf was bland. I added 1/2 a packet of french onion soup and about 5 basil leaves chopped finely. There was really good flavor and I probably could have used even the whole packet of french onion soup mix. My potatoes were undercooked and were probably considered medium sized so next time I would just cut the potatoes in half.

Any dish that doesn't require an oven gets an automatic 4 star from me. My husband is getting tired of cold cuts and salads but we have 1 AC unit dead(it blew up) and the temps in house have been climbing ever closer to 90's in my kitchen, especially late in the afternoon. This will be a nice surprise for him when he gets off work tomorrow--14 hr day. Will make few if any changes in recipe and plan on enjoying a hot meal for the first time in weeks. Adding potatoes and carrots just make it a meal in a dish and I don't have to mess up any other dishes---WHEE. Salad on the side and dinner is done. Thank you for a great idea.

Great! I am very happy to find a summer meatloaf recipe. Love that the veggies cook with it. Based on ingredients I had to use up I used 1 c bread crumbs instead of bread slices, 1 lb ground turkey instead of 1.5 lbs ground beef, and bbq sauce instead of ketchup. I added beef bouillon, dried minced onion, garlic powder, and onion powder (basically dry onion soup mix). I think that with the bbq sauce gave it more flavor. I also added a little more bbq sauce on top near the end because mine melted away into the slow cooking liquids. Next time I will add fresh parsley to the mix and a few more spices. We like very flavorful food. This is a great base to work off of. I didn't have the full 7 hrs so I cooked on high 2 hrs and low 3 hrs. A great base recipe. There are a million ways to make it your own. Who knew you could make meatloaf in the slow cooker?

4 stars as I modified it slightly - add a couple of tablespoons of celery to the meatloaf mix, omit the carrots altogether, cut the potatoes in cubes and toss with butter before putting around the meatloaf and top the meatloaf with some green pepper rings.
