Slovak Christmas Soup (Kosare Jucha)

Directions

  1. In a large saucepan over medium heat, saute onion in butter until brown.
  2. Stir in sauerkraut with juice, water, mushrooms and garlic. Season with salt and pepper and bring to a boil. Then reduce heat, cover and let simmer for 1 hour. Stir in pasta and simmer 10 minutes more, until pasta is al dente.

Very very easy soup, and inexpensive as well. I made my version with oyster mushroms (which are cheaper where I live) and macaroni! Very tasteful!! Will definitely make again!

I enjoyed this soup with some change I saute the onions,mushroom,garlic and used one container of chicken broth with 2 cups of water I also ground up some caraway seeds plus some whole ones for good measure.I didnot add salt but did add the pepper.Next time will try veg.broth and add spaetzle instead of elbows.I will give this a 5 star rating

a good soup for those who like kraut, my husband who isn't quite the fan i am liked it but desired a little less of the cabbage.

I didn't really care for this. To me it tasted like watered down sauerkraut with mushrooms. I'm a sauerkraut fan, but I won't be making this again.

Used chicken broth instead of water. Used potatoes instead of pasta. The soup was hearty and delicious. We may try beef broth next time.
