Skillet Peach Dumplings

  1. Combine peaches, 2/3 cup white sugar, brown sugar, water, 1/2 cup margarine, and cinnamon together in a large skillet; bring to a boil. Cover skillet with a lid and cook peach mixture until sugars have dissolved and peaches are softened, about 10 minutes.
  2. Mix flour, 1/3 cup white sugar, baking powder, and salt together in a bowl. Cut 3 tablespoons margarine into flour mixture until mixture is crumbly; add milk and stir until you have a soft dough. Drop tablespoons of the dough into the peach mixture.
  3. Cover skillet tightly with a lid and cook, without removing lid, until dumplings are cooked through, about 15 minutes.

This is absolutely delicious and so easy. I did the peaches exactly according to the recipe (except I used butter instead of margarine). I changed the dumpling recipe slightly since I had never seen a fluffy dumpling recipe with cut in shortening, and I was afraid the texture would be more like biscuits than dumplings. I used my mother's recipe which is similar except it calls for breaking two eggs into a measuring cup and filling with milk to make one cup instead of cutting in butter. I will try again with apples and maybe blueberries. Wonderful flavor.

Excellent! I followed the recipe and didn't make any changes. A nice change from the traditional peach cobbler

My husband really liked the dumplings, but I used 50% less sugar than it called for, and butter instead of margarine. It was very good.
