INGREDIENTS
1 medium onion, chopped
1 teaspoon olive or canola oil
1 cup cubed fully cooked lean ham
1 cup sliced fresh mushrooms
1/2 cup reduced-sodium chicken broth
1/4 cup water
1/8 teaspoon pepper
3/4 cup instant rice
2 green onions, sliced
1/4 cup shredded Parmesan cheese

DIRECTIONS
In a nonstick skillet, saute onion in oil until tender. Add the ham, mushrooms, broth, water and pepper; bring to a boil. Add the rice. Reduce heat; cover and simmer for 5 minutes or until rice is tender. Gently fluff rice. Serve with green onions and Parmesan cheese.

Very quick and easy recipe. I did add garlic to the onions, and cumin and dill before the rice. all four kids and my husband polished thier plates. thanks.

This was VERY easy to prepare. It is also inexpensive and filling. I changed the reduced sodium chicken broth to ham stock and added pinto beans. I found it tasty and satisfying.

This was good! Thanks for a recipe using instant rice. (Often when I sub instant rice and try to use it with a recipe it dosen't work because I have the time or water amount "off".) This was great as a sidw with left over ham
