Thank you Sarah for a really nice recipe that my family enjoyed. I nixed the dried herbs because I had some homemade pesto-which pretty much contained the same ingredients but was fresh instead of dried. I also used fresh garlic instead of dried. I also subbed penne pasta for shells and added mushrooms along with the vegetables. Clearly, this is a pretty versatile recipe, and the sauce was a BIG surprise-especially since I have two kids who dislike mayo and took 2 helpings of this. (I informed them after dinner.. heh heh) This is a keeper recipe!

I loved this recipe - so quick and easy, with lots of great flavor. The sauce ended up very thin, because there was an awful lot of liquid in the pan from the chicken and vegetables. I will probably drain this next time. Otherwise a great recipe for a quick dinner.

We enjoyed this recipe very much. We used lowfat olive oil mayo, and served on whole wheat spaghetti noodles. My guy couldn't get enough!

My family thoroughly enjoyed this recipe. It is the kind that you can adapt to whatever vegetable you like or have in the fridge. I prefer my food spice so we also added hot salt and jalapenos to the dish. I will be making it again.

I couldn't believe that the resulting sauce was from Mayo and Parmesan cheese! It didn't taste at all too tangy like straight mayo at all, and was so tasty that I am looking forward to using this shortcut sauce for other meals. I used 2 small yellow squash instead of zuchs, and didn't have any green peppers, so left those out. I also made sure to salt the chicken while cooking it, as well as the veggies, as the first reviewer mentioned this. My husband loved it and I did too. I will use this concept for fast meals with any veggie combo and maybe even shrimp in lieu of chicken in the future.
