INGREDIENTS
1 pound ground beef
1 small onion, chopped
1 garlic clove, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 1/2 cups water
1 (6 ounce) can tomato paste
1 tablespoon dried parsley flakes
2 teaspoons dried oregano
1 teaspoon salt
2 1/2 cups uncooked bow tie pasta
3/4 cup small curd cottage cheese
1/4 cup grated Parmesan cheese

DIRECTIONS
In a large skillet, cook beef, onion and garlic until meat is no longer pink; drain. Add the tomatoes, water, tomato paste, parsley, oregano and salt; mix well. Stir in pasta; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until pasta is tender, stirring once.
Combine cheeses; drop by rounded tablespoonfuls onto pasta mixture. Cover and cook for 5 minutes.

I think this recipe would be good as-is, but I made a few modifications that turned out pretty good. First, I used italian sausage in place of the ground beef. We were out of tomato paste, so I used 1/4 cup of ketchup and omitted the salt. Also, I added 1 tsp. of basil and an extra 1/4 cup of water to the recipe because it ran out of water and was sticking. Definately a keeper! Reminds me of a GOOD version of Hamburger Helper because there's no chemical after taste.

Easy, tasty, and cheap one-skillet meal. I doubled the garlic and all the seasonings, and added some dried basil as well. Seemed to be a bit bland without doing that. You could use the cans of tomatoes and tomato paste that are already seasoned with garlic, to give it more flavor. I also upped the nutrition by adding chopped bell peppers and zucchini. There are probably other vegetables that would work as well. The vegetables blend right in taste-wise, and give it more variety in texture. Great way to sneak vegetables into your kids' food!

This was a great fast dinner. I Added more seasoning as if I was cooking lasagna as well as spinach. I also use penne pasta, a cup more of water and ricotta cheese in place of cottage cheese. It was great for a quick dinner!

Very good. I made this according to directions. But I did have to add more water during the cooking. We topped ours with mozzarella cheese on the plate. We are cheezy like that. The whole family enjoyed. Thanks for a great and quick recipe.

Very good and an easy alternative to lasagna. I use broken up lasagna noodles so it looks more like lasagne. **Also, it needed a little more water since it dried up at the end, so I'd add 1/2 cup more.
