This is a great recipe, however, add-ins are a must! Can't get any better than this for a weeknight dinner -cheap fast and easy! I also subbed cream of chicken soup for one of the cans of broth as well as a jar of fire-roasted salsa instead of the canned tomatoes. I used canned chicken because I had some on hand that needed to be used, but will definitely be using fresh next time. I added about a c. frozen diced onion, 1/4 c. finely chopped cilantro, 1.5 T. lime juice, 2 oz can diced green chiles, 3 cloves finely chopped garlic, and seasoned to taste with chili powder and cumin. Turned out great...my picky hubby said he would have eaten 5 bowls if he could've :)
