A very simple and quick Filipino dish. This is a sour broth soup with tilapia fish fillets. The flavor is sour but it actually enhances your appetite. This is considered comfort food in my house.

I grew up around Philippine families, and learned how to make adobo. I've since 'Americanized' the recipe, and customized it to suit my family's tastes. It's a meltingly tender, sharp-flavored stew that can be made with pork or chicken. Best served over rice.

Make a big batch of these ribs because they will disappear quickly! Ribs simmered in soy sauce, onions and star anise are finished with a baked-on glaze of honey, ginger, soy and Worcestershire sauce and a touch of lemon.

Tamale Pie Casserole

First you cook up a batch of cornmeal and then you saut E the ground beef, onion, tomatoes and pimento, and add a dash of cayenne. A layer of cornmeal is poured into a 3-quart casserole, topped with the ground beef mixture and finished with more cornmeal. Slow cooking this pie in the oven makes it irresistible.

This is a simplified version of a Vietnamese beef noodle soup. Hot broth is poured over paper-thin slices of top round, cooking the meat, and the soup is then garnished with basil, cilantro, bean sprouts, and wedges of lime.
