How incredibly simply perfect. Really top notch! By the way, the easiest way to peel a butternut squash is with a plain old vegetable peeler. Peel it, then cut off the ends, slice down the middle, scrape out the goosh and seeds and then chop it up per your recipe instructions. Easy peezy!

First time to cook butternut squash. When I tried to peel it, it was so difficult I though perhaps it was not ripe enough. So, I cut it in quarters, covered it with plastic wrap and threw it in the microwave for 8 minutes, let it sit and then peeled, cubed and roasted it. Since I am not a big garlic fan, I only used one clove. It came out so good even my husband said it was good.

Peeling tip: Before peeling, wash and poke holes in the squash, then put it in the microwave for 3 minutes. After it cools down a bit, you can easily cut and peel it.

This was yummy and so simple! I tossed the squash in EVOO and spread out on a baking sheet. Then I sprinkled salt and Italian seasoning over top. I left out the garlic, but I'm sure that would be good too.

Very nice change for my family. We normally make butternut squash with butter and brown sugar, but really liked this recipe because it is much healthier. :)

I cut my squash in half length wise and then scooped out the seeds. After that I removed the outer shell with a potato peeler and cut the remainder into cubes. Cooked exactly as above recipe called for and it turned out perfect!
