Ingredients

  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1/2 cup olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley
  • 1 pinch salt
  • 1 pinch ground black pepper

Directions

  1. In a medium glass bowl, mix together tomatoes, oil, garlic, parsley, salt and pepper. Cover, and refrigerate overnight, allowing the flavors to 'mix and mingle'.
