4 cups coleslaw mix
1 medium sweet red or green pepper, finely chopped
5 tablespoons sugar
5 tablespoons cider vinegar
1/4 cup water
1/4 teaspoon salt
1/8 teaspoon pepper

DIRECTIONS
In a large bowl, combine all ingredients and toss to coat. Cover and refrigerate for at least 4 hours or overnight.

This was exactly the kind of vinaigrette slaw I was looking for! I am a big vinegar fan though so I increased that a little and added a little less sugar - Yum!

Seemed to be missing something. Although having no oil is healthy, I would have added a little olive oil. Maybe some chopped onion of any kind too. I added some honey as another reviewer had done and I liked the results of that. This recipe made as stated though isn't the best and there are other similar recipes on this site that are much better,

This was great! I did add 1 tbs of fresh cilantro and 1 tbs of honey.
