Rich and cheesy enchiladas stuffed with imitation (or real) crab, mushrooms, sauce, and cheese! 

Shrimp Enchiladas

Enchiladas with shrimp marinated in garlic, olive oil, ginger, blended cheeses and hot sauce, covered with salsa. Serve with sour cream and salsa on the side. Goes great with a green salad and rice.

Shrimp and Crab Macaroni Salad

A cold shrimp and crab salad with pasta, celery, onion, and green pepper. Imitation crabmeat also works well in place of real crab. Can also be made with salmon or tuna in place of shrimp and crab.

These are beef filled tortilla shells baked in a creamy chicken soup and cheese sauce. My husband absolutely loves these. I served them to guests once with Mexican rice, and they went home with the recipe! Enjoy!

A seasoned bean and potato mixture is wrapped with Monterey Jack cheese in corn tortillas, then baked with an enchilada sauce, and topped with Cheddar cheese. This sounds strange, but it's really, really good. I came up with this when I was craving Mexican food and we didn't have may traditional ingredients in the house. It came out great, and it received rave reviews.
