1 cup Italian salad dressing, divided
2 pounds jumbo shrimp, peeled and deveined
2 large onions
16 large fresh mushrooms
2 large green peppers, cut into 1 1/2 inch pieces
16 cherry tomatoes

DIRECTIONS
In a large resealable plastic bag, combine 1/2 cup salad dressing and shrimp. Cut each onion into eight wedges. In another large resealable plastic bag, combine the vegetables and remaining dressing. Seal bags and turn to coat. Refrigerate for 2 hours, turning occasionally.
Drain and discard marinade. On eight metal or soaked wooden skewers, alternately thread the shrimp and vegetables. Grill kabobs, covered, over medium heat for 3 minutes on each side or until shrimp turn pink.

Nutritional Analysis: 1 kabob (prepared with fat-free dressing) equals 150 calories, 2 g fat (trace saturated fat), 169 mg cholesterol, 630 mg sodium, 13 g carbohydrate, 3 g fiber, 21 g protein. Diabetic Exchanges: 2-1/2 very lean meat, 2 vegetable.

These were delicious and easy. I wanted something a little different and these were great. I made extra skewers of just the marinated veggies too. I wasn't crazy about the tomatoes because they got a little mushy. I think that next time I will just leave them off although I love the red color they add. I think I will use some red pepper in their place.

Yummy! I'll make this next week for company! DH didn't have the grill hot enough so it took a little longer and I didn't get grill marks - but next time I'll man the grill or have him put the veggies on before the shrimp.

How fun! I loved making this! It was a great thing to make with kids, and it smelled SO good while it was grilling. I also sprinkled some chilli powder on each for a spicier taste. Fabulous!

We really enjoyed this recipe! I used fat free dressing to marinate the shrimp and veggies to keep the calories down. The most time consuming part was putting the food on to the skewers... but, they cooked up fast and were delish so it was worth it!
