We were very disappointed with this recipe. We found the recipe very dry and bland. We tried it didn't like it, and will probably not make it again.

I fixed this recipe exactly as it is for my husband's birthday and we both loved it!! I am not a very good cook; therefore, I have to follow recipes step by step, and this one was easy to follow. This meal has become one of my husbands favorites. Thank you so very much.

I will make these again. I did the meat in the crock pot. Does take awhile, but good for sharing with friends, etc.

Very tasty--for healthier version substitute plain (full fat or low fat)yogurt for the sour cream--it cooks up great w/ the onions and chilis and with all that cheese you don't notice. Great recipe, a nice change from ground beef enchiladas at my house.

A keeper! I actually got 8 enchiladas out of this rather than 20, but they are a tasty 8 none-the-less! I did not fry the tortillas and don't miss it. I also topped them with Red Enchilada Sauce before the cheese. That I cannot recommend...but I will find another enchilada sauce and do this again!

I'm actually cooking this now! and have a question- what are people usin for the red sauce that goes on top? Or is this recipe better with out? A few people mentioned it, and I didn't know if I should give it a try? Thanks for any feedback!

This was a good recipe-even for the kids. I did change a few things, though. I used 2 freshly roasted and peeled poblano chiles. I used Chihuahua cheese and white corn tortillas. I added water as needed and never put it in the oven. The meat stayed very moist. Maybe not authentic but my husband and very picky brother-in-law(both from Mexico)gobbled up their food! Use a freshly made tomato salsa-cold. It really brightens up the flavors

They were good, but dry after the oven. Needed cream cheese, salsa or a sauce on the side to moisten the bite.
