We really enjoyed this. We don't care for chicken thighs very much, so I used boneless, skinless chicken breasts instead. Because some of the reviewers mentioned that this was pretty spicy, I omitted the red pepper flakes and reduced the amount of black pepper. I did add about 1/4 teaspoon of cayenne pepper for a little heat. I also didn't have any fresh ginger root, so I used about a teaspoon of ground ginger. With these modified measurements, the flavor was fantastic without the heat being overpowering. I also want to try this marinade on salmon sometime!

Awesome!!! I made with chicken breasts in the slow cooker, I also marinated overnight in fridge. After cooking in the slow cooker for about 6 hours I shredded the chicken and served over steamed rice with veggies. I reserved some sauce to thicken and drizzle over the top. Because I was serving to kids I used 1/2 teaspoon cayenne pepper, 1 teaspoon of red pepper flakes and no paprika. The kids and I thought it was great, my spice loving husband wanted more kick. So, next time I will add the spice in a portion of the sauce I thicken for him. :) I marinated with 12 breasts and cooked four. We had plenty for lunch the next day and I froze the rest in baggies to use later. Thank goodness we liked it! And I can't wait to share with all my family and friends this summer!

Made as stated except used bonless skinless breast and dried ginger as that is what I had. I did use all the optional seasoning. Marinaded for about 4 hours. This turned out pretty spicy- Hubs and I loved it but the kids wouldn't touch it. I boiled the marinade just before grilling for about 15 minutes and used it for basting. Will make again!

This marinade is delish! I have used it with chicken both b/s breasts and thighs. Also big kabob sized cubes with the chicken. Enjoyed it so much we marinated pork chops in it as well and grilled. Yum!

This was a hit with my family BBQ! I marinated the meat the night before. The only thing I may change next time is adding less (or none) oregano. The 1st time I used all ingredients except cayenne pepper.

This recipe is AMAZING!! I live in VA but spent a lot of time in Hawaii for work and everytime I make this chicken it brings me back! The perfect mix of spicy and sweet. The only thing I do differently is use the low sodium soy sauce. I love when it gets a little extra char from the grill... that's when it's the best :). Great paired with some grilled pineapple rings. Props to the creator, LOVE IT!

Big Hit!! My daughter made this as part of a Girl Scout badge step where she needed to make a regional recipe. Everyone really liked it, we found it quick and easy. next time I will probably make it a little easier, I don't usually keep ginger root on hand so will substitute for ground. I don't think we used all the garlic but our cloves were quite large. I might use a little less oregano.

This recipe is GREAT! The first time I made this I baked in the oven because of rain. The second time I grilled and it was even better. Definately a keeper recipe.
