INGREDIENTS
1 pound butter (no substitutes), softened
1 cup sifted confectioners' sugar
3 1/2 cups all-purpose flour
1/2 cup cornstarch

DIRECTIONS
In a mixing bowl, cream butter and sugar. Combine flour and cornstarch; gradually add to creamed mixture.
Pat into an ungreased 15-in. x 10-in. x 1-in. baking pan. Pierce several times with a fork. Bake at 325 degrees F for 40-45 minutes or until lightly browned. Cut while warm.

Finally, I have found an excellent shortbread recipe. Melt in your mouth, delicious. Like the fact that they bake on a slab in a pan, then slice.

The texture of this cookie was a little chalky and very hard. It was extremely hard to get the dough to come together so perhaps it was overworked attempting to get it molded into the pan. Maybe it's time for me to buy a kitchen aid! The flavor is good, but I don't think I would make these again.
