2 cups buttermilk pancake mix
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
2/3 cup milk
1/3 cup molasses
1/4 cup sugar
2 tablespoons cold butter or margarine

DIRECTIONS
In a bowl, combine the pancake mix, cinnamon and ginger. Set aside 1/3 cup for topping. In another bowl, combine milk and molasses. Stir into dry ingredients just until moistened. Transfer to a greased 9-in. pie plate. In a small bowl, combine sugar and reserved pancake mix mixture. Cut in butter until mixture resembles coarse crumbs. Sprinkle over batter. Bake at 350 degrees F for 25-30 minutes or until a toothpick comes out clean. Serve warm.

This was great in my opinion. But I did change a few things. I added 1 egg to the batter and also added 1/3 cup brown sugar to the topping mixture. I made glaze for the top too, but it was very sweet with the glaze on it. If you like super sweet, then make the glaze !

Holy wow this was tasty!! This sliced beautifully from the pan, and is wonderful with a scoop of icecream or whipped cream!! I added some brown sugar into the crumb topping for more flavour. I will make this again and again! Thanks!

I really thought I'd messed up when I put it into the pie pan but it baked up beautifully and was wonderful with my morning coffee!

I followed the recipe exactly, but this did not come out like "cake." Granted, it was edible and had a good flavor, but can definitely not be cut into a slice, as said in the other review, and is more like a crisp in that you have to eat it with a spoon. Great flavor, recipe needs adjustment.
