This is a family favorite on my hubby's side. I tried it and became an instant convert! We use chicken or turkey and omit the mustard... If you have left-overs, plan to add more shoestrings when you do eat them.

Really yummy! My kids, husband, and mother all loved it. I couldn't find the shoestring chips, but substituted crunchy chow mein noodles instead. I also mixed in green beans to mine and liked it even better. Thanks for the great recipe!

This isn't the most beautiful looking salad, but it sure tastes good. Serve it immediately after you add the shoestring potatoes otherwise they'll get soggy.
