INGREDIENTS
1 cup sugar
1/4 cup cornstarch
1 1/2 cups water
3 egg yolks, lightly beaten
1/4 cup lemon juice
1 tablespoon grated lemon peel
6 drops green food coloring
1 (9 inch) pastry shell, baked
MERINGUE:
3 egg whites
1/3 cup sugar

DIRECTIONS
In a large saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil. Cook and stir for 2 minutes or until thickened.
Stir a small amount into egg yolks; return all to the pan. Cook and stir for 1 minute. Remove from the heat; stir in the lemon juice, butter, lemon peel and food coloring until smooth. Pour into crust.
For meringue, beat egg whites until stiff peaks form. Spread over hot filling, sealing to the edges. Bake at 350 degrees F for 10-15 minutes or until lightly brown. Cool.

Recipe is not quite standarized. Directions say stir in the butter near the end of the directions but there is no butter listed in the ingredients. Also directionssay "For meringue beat egg whites until stiff peaks..." But it does not tell you to add the sugar that is listed as part of the meringue in the ingredients above.

I have this recipe in its entirety, even the mysterious omitted ingredient--butter. My recipe called 'Shamrock Pie' calls for 1 tablespoon of butter. And my recipe is identical in every other way (ingredient quantities are exacty the same, and the cooking instructions are exactly the same as well, step for step). Perhaps this will help some of those (understandably) confused chefs!

Just use Jello Cook and Serve Lemon Pudding and add green food coloring. It's fail-safe, easy and quick.

i was hoping to make this recipe for St.Patricks day however i need to know how much butter to put it in. like stated by the other member they do not have it in the ingredients list!

Very Delicious. I substituted an oreo cookie crust for the pie crust & was very satisfied with the new twist this added to the recipe. Everyone loved it. I will definitely make this pie again.

I made this pie for company and was so dissapointed. The filling had too much cornstarch and tasted like it. Not enough lemon in it. I added extra and that didn't even kick it up. I only used two drops of food coloring and that was plenty to make it birght green. Then the merengue shrunk up after baking. Not sure why that happened. Won't try this again!
