This is absolutely fabulous. I made it as described, aside from using low fat cream cheese and low fat sour cream. I also skipped the green peppers because they are not my favourite. I had been concerned that the lettuce would get soggy but based on some of the positive comments about the lettuce, I kept it in. I'm glad I did! It was yummy and made it a bit different.
It makes a huge amount and I did have the thought that since I had leftovers, maybe I shouldn't have put the lettuce in it, as now it would be soggy and the leftovers might go to waste. I opened it up this afternoon (the party was yesterday) to see if I could pick out the lettuce and still enjoy the dip.
To my surprise the lettuce is STILL crispy, not in the slightest bit soggy. I had made a point to spin it in the salad spinner first before putting it on the dip though I thought surely it would absorb the moisture from the salsa. it didn't, the dip is great even as leftovers, had some for lunch without chips - just on a fork. Yum!
