Seven-Layer Gelatin Salad

1 (3 ounce) package cherry gelatin
4 cups boiling water, divided
2 1/2 cups cold water, divided
2 envelopes unflavored gelatin
2 cups milk
1 cup sugar
2 cups sour cream
2 teaspoons vanilla extract
1 (3 ounce) package lemon gelatin
1 (3 ounce) package orange gelatin
1 (3 ounce) package lime gelatin

DIRECTIONS
In a bowl, dissolve cherry gelatin in 1 cup boiling water. Add 1/2 cup cold water; stir. Pour into a 13-in. x 9-in. x 2-in. dish coated with nonstick cooking spray; refrigerate until set but not firm, about 30 minutes.
In a small saucepan, sprinkle unflavored gelatin over 1/2 cup cold water. Let stand for 1 minute. Stir in milk and sugar. Cook and stir over medium heat until gelatin and sugar are dissolved.
Remove from the heat. Whisk in sour cream and vanilla until smooth. Spoon 1-2/3 cups creamy gelatin mixture over the first flavored layer. Chill until set but not firm. Prepare remaining flavored gelatin as directed for cherry gelatin. Alternately layer flavored gelatins with creamy gelatin layers, allowing each to set before adding next layer. Top with lime gelatin. Refrigerate overnight. Cut into squares.
FOOTNOTE
This salad takes time to prepare since each layer must be set before the next layer is added. Also remember that the pan will be inverted when unmolded, so put the flavor of gelatin you want on top in the pan first.

I've been making this recipe for the past 20 years; it's been around a long time!! It is quite labor intensive, but with some planning is definitely worth it. One trick is to make your flavored Jello as soon as you put the previous white layer into the frig to set. In fact sometimes I mix up each of the flavored Jellos and just leave them on the counter until ready to use. If the flavored Jello is slightly cooled before pouring, it will set more quickly. I allow each layer to set about 30 minutes. Pour each layer very carefully (I sometimes spoon it over)to avoid mixing with the previous layer. I can usually only use 1 1/2 cups white mixture for each layer to have enough for the last white layer. Use any colors/flavors of Jello you like, depending on the occasion. At Christmas we use red and green, for July 4th we use red and blue.

I wanted to love this as much as 7 year old me once did...apparently, my tastes have evolved. Didn't *love* the taste and it was VERY time consuming! Doesn't take a ton of hands on time, but make sure you have at least 4 hours available if you plan to make this. Apparently, there's also a big diff between *firm* and *set*, too (and I don't know what it is...I allowed all the layers to set for about the same time, but I had some that didn't meld so the layers SLID OFF at service). This def looks cool and is a great convo piece, but I'd rec making in ind servings for serving ease. I made mine w/a variety of Jello flavors (some sugar free) in red, orange, yellow, green, and blue.

I was given this recipe 15 years ago by a firend who made it for a bridal shower. I substituted the following flavors of jello for a tropical refreshing taste Pineapple, triple berry, watermelon, orange, tropical punch and peach.

I made this recipe for a potluck and everyone commented on how good it was and how nice it looked. I agree that it takes a little longer to make it, but it is such a fun recipe to make and kids absolutely LOVE it.

I didn't want to make the full recipe, so I halved it: used two packages of fruit jello (orange and lime), one envelope of knox gelatin, etc. Each package of jello thus made two layers--instead of four different flavours, I had two which were repeated. Instead of vanilla, I used a good amount of fresh lemon juice in the sour cream layer and only a scant amount of sugar. Served with lime wedges or lemon wedges, it is a nice cool citrusy dessert.

This is a family favorite dish from my childhood. We called it Ribbon Jello and my Mom made this dessert only in the summer months. It was wonderful to have a "slice" after coming home from a trip to the swimming pool. Sometimes we would see if we could eat it layer by layer instead of with all layers in one spoonful. I'm so glad to see others love it, too!

While this will probably be tasty, it was definitely not worth the hassle. The prep time says 1/2 an hour, but with having to chill each layer before adding the next, it took me most of the day to complete. The directions say the layer should be "set but not firm". I found it much easier to have the layer firm; otherwise, there were holes made, which made me mad because the reason I wanted to make this is because it looked neat. Only make this recipe if you have lots of time and patience.

This recipe really does take a lot of time (I'm still working on it and have one white layer and one jello layer to go yet). I started it last night, put the white stuff in the fridge (it has dairy in it, so probably a good idea not to leave it on the counter) and put the white in the microwave to re-liquify it this a.m. So far, it looks really pretty, and since I'm making this for a kid party, that's what matters.

This recipe always gets raves. Not only for kids (who love it), but even adults rave about this one. Only make this if you can dedicate a whole day (preferably the day before you need it) to preparation. Also let it get nearly completely set before adding layers. You don't want the layers to slide off each other, but you don't want to mix them either.

This is a family favorite. It is time consuming, but it is worth it. I think that it is actually better the next day, after it has completely set. It is a beautiful dish and always is raved about!!!
