I just made these last night and my fiance loved it! I added the flour like the recipe said but just didn't add as much. At most I put a tablespoon and Half. That amount was perfect, nothing clumped up or fell off. I do know that the flour helped it sear. My only issue and this may be my own fault. My oil was WAY to hot although I read online that it should be very hot. The oil splattered every where and made a huge mess. So net time I will tone the oil down. The scallops were perfectly cooked but were a tad salty to me, although my fiance went crazy over it. So really it just depends on what you like. All in all, thise recipe was delicous, he said it was his favorite meal. I paired it with asparagus and garlic angel hair pasta.
