4 cups all-purpose flour
1 cup sugar
1 pound cold butter (no substitutes)

DIRECTIONS
In a large mixing bowl, combine flour and sugar. Cut in butter until mixture resembles fine crumbs. Knead dough until smooth, about 6 to 10 minutes.
Pat dough into an ungreased 15-in. x 10-in. x 1-in. baking pan. Pierce with a fork. Bake at 325 degrees F for 25 to 30 minutes or until lightly browned. While warm, cut into squares. Cool.

These were good but not 'the best'. I did cut the recipe in half and used a pan that was probably too small as the bars were a bit thick. I think that was the problem. I'll make these again and be sure that the dough is spread thin, I'm guessing 1/2 inch.

Loved the recipe. Found it was easier to work the butter in and make the crumbly dough with slightly softened butter then with the cold butter. Otherwise it was great.

These were very tasty little cookies, very much like real Scottish Shortbread. The only thing that disappointed me at all was they did not freeze very well. They became rather dry and crumbly after being thawed out. So if you're looking for a cookie that freezes well, pass on this one. But if that's not an issue... then this is a keeper!
