This is the only onion soup recipe I know of that is baked in a casserole, making it easy to serve to a crowd as a fist course. I love this recipe for dinner parties because it can be made ahead. This rich soup can also be a meal in itself.

My kids can't resist their grandmother's bean soup. A touch of nutmeg sets it apart from all other kinds.

Before retiring, I worked as a cook for 15 years. Now I spend lots of time in my kitchen preparing new, interesting food for the family. You'll love this rich homey soup.

I like making homemade noodles and I often add carrots, potatoes and corn to this soup. To me, homemade soup means homemade bread, too! Rich soup and fresh bread...what great country food at any time of year.

'When my godchild, Alex Van Ackeren, was young, I often gave her a children's cookbook for her birthday or other special occasions,' shares Lorri Reinhardt of Big Bend, Wisconsin. 'We'd plan an entire menu from the books, prepare the meal together and serve it to her family. This soup recipe was a favorite.'

Served with biscuits and a salad, this soup is delicious on a chilly autumn evening. It's one of my family's favorite.

My widowed father isn't much of a cook. So I keep plenty of this delicious base on hand to serve as is or use in a variety of recipes.

A friend gave me this recipe 25 years ago. At the time, she was in her 60s and working as a cook on a riverboat barge.

'I get frequent requests from my family for this thick, full-flavored soup in the winter,' reports Myrtle Brandt of Morris, Manitoba, 'especially on -35 degrees F days, which are not uncommon here!'
