I made this as a Thanksgiving side dish today. I was unsure if this was the recipe to make, because my extended family is very picky. This recipe was a great choice by the end of the meal there was only one spoonful left. I received many compliments. Regarding the recipe I did not change any of the ingredients. I did add the liquid from the corn, which made the scalloped corn moist and delicious. I did extend the baking time to 50 minutes. This was a wonderful recipe!!!!

This is a delicious side dish to accompany nearly any menu. Delicious but not overly-rich. Particularly good during the holidays as a companion to the casseroles that are typically a part of a holiday menu.

A DEFINATE KEEPER!! My husband (then boyfriend) used to always compare my cooking to his mother's. Scalloped corn (like many other recipes) was one recipe that I could never duplicate well for him. I'd always get the "It's not bad, but I like Mom's better. Just ask her for her's" B/c of pride, I kept looking until I came across this one. The first time I got the "Whoa, this is good. Even better than Mom's." followed by, "Write this one down!" I do do a few things: I add a bit of shredded cheddar to the mix, prior to baking, and I do drain the regular corn (I don't like mine so wet) We have this dish almost 3-5 times a month for supper b/c we love it so much!

I first made this dish for Thanksgiving a few years ago. It's VERY good and simple too! My family volunteers me to make it every Thanksgiving. I will be making it this year as well!

This is the second recipe I tried, of the hundreds I saw and read... I will surely be making this again! Loved it! Much lighter than the last version....I used 1/2 can creamed corn leftover from the previous try. Used 1 can regular corn, and substituted 1 package butter-milk biscuit mix instead of corn muffin mix. (used this up in previous version) Otherwise, everything was as the recipe called for. Baked in 8x8 pan for approximately 30-35 minutes. Scrumptious!! I plan to make this for Thanksgiving without a doubt....Thanks so much!!

I used a pan that was too large for the recipe, so the end result was dried out. I fixed this by topping it with applesauce, sprinkled some cinnamon and nutmeg, paprike for color and broiled it. Deliciously moist!

Another winner from someone that loves allrecipes like me! This one I doubled for a family reunion and baked for 50 minutes because it was quite watery in the center at 40. Also note - drain the canned corn! The recipe doesn't say so but you gotta or it will never set. Taste sweet and cornbread like and its just the best. I added a little cajun seasoning to give it a kick.

My mom has new dentures and it's not going so well. I have been looking for recipes that are visually appealing, easy to chew and tasty. This completely met my goals. She says it is fabulous. And it's not safe for either of us to be alone in the room with the baking dish full.. it's a little too good! :) We'll be rotating this thru our menus regularly now. used light sour cream, everything else was the same. loved the corn muffin taste in it. it came out a little dry, but probably cos i cooked it too long (an extra 10 i think). thanks!!

Awesome! I actually baked it without the butter and had to add it on top after baking, but it still came out great! I used a little less sugar and I think that half of the butter would suffice, I will make these changes next time. I even used light sour cream and it still was great!

Very good. The only change I made was to use a 6.5 ounce corn bread mix instead of 8.5. Still tasted great!

My family adored this recipe. My father a self declared gourmet chef even asked for the recipe saying that it was even better than his own(which is a multi-hour elaborate process involving shucking fresh corn from the cob and so on).

My husband was skeptical about eating this because it "sounded funny", but quickly admitted it was the best corn side-dish he's ever had. It was long gone before the mashed potatoes!

I made this recipe for Christmas dinner -- turned out great. I did add an additional can of corn -- so I used two 15.25 ounce cans of whole kernel corn (drained) and one 15.0 ounce can of creamed corn. I also omitted the sugar -- it is not needed with the corn muffin mix. It baked up great - not runny at all and my whole family asked for seconds -- a quick and easy recipe that is a crowd-pleaser.
