Cooking the potatoes to the correct doneness is key in this recipe. If my potatoes had cooked any longer, I think the consistency and texture would have been too mushy and not the hit it was. This was a great alternative to regular potato salad and everyone was quite surprised to find they liked it more than they expected. I made everyone try it and 90 % of them liked it alot. I used 1/2 real mayo and 1/2 salad dressing and orange,red and green peppers for color. I will definitely use this recipe again...maybe at Thanksgiving for a switch from traditional sweet potatoes, although it certainly is not just a holiday salad!

A++++++... I can't say enough about how good this recipe is! I hate it when sweet potatoes are manipulated into sugary dishes, when they are perfectly sweet without making them taste like candy. This dish compliments the natural sweet potatoe soooo well! I had tri-colored sweet peppers, so I used them all to add color. I used less mayo and purposely overcooked 1/3 of the potatoe until mushy so it made it very rich and moist when I mixed it up. Tabasco sauce worked well for the pepper sauce too! Tasted even better the next day.... Thank you, thank you, thank you Marlen!!!

This was a nice alternative to regular potato salad, people at the party I brought it to seemed to enjoy the novelty of it as well as the taste.

Love sweet potatoes--love this salad! I followed the recipe, as it was the first time making it, and am glad I did. I used sweet Vidalia onion. The natural sugars in the potatoes, red bell pepper, and onion really came out after sitting in the refrigerator for a few hours to sweeten the dressing just right. And even though I overcooked the potatoes a bit, everyone raved about the finished product. This recipe is a keeper!

I agree with RaNae .. it's awesome and thank her for her suggestions. I also substituted fat free sour cream for 1/2 of the mayonnaise ingredient.

This was an awesome potato salad!! I used red onion, and added diced cucumber, and a tbsp of mustard. The cucumber adds a nice crunch. Many compliments at the table!! One comment was that it is a new found favorite and he will never have another white potato salad again. We'll see.....

I made this the day after thanxgiving, so used celery in place of pepper, and added chopped turkey to serve in pastry puffs. Delicious :)
