1 large red bell pepper, coarsely chopped
1 tablespoon olive oil
1 small red onion, finely chopped
3 garlic cloves, minced
8 cups packed fresh spinach
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon sugar

DIRECTIONS
In a large nonstick skillet, saute red pepper in oil for 1 minute. Add onion and garlic; saute until tender, about 1-1/2 minutes longer. Stir in the spinach, salt, pepper and sugar; saute for 1-2 minutes or until spinach is wilted and tender. Serve with a slotted spoon.

Nutritional Analysis: One serving (1/2 cup) equals 65 calories, 4 g fat (1 g saturated fat), 0 cholesterol, 342 mg sodium, 7 g carbohydrate, 3 g fiber, 2 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.

This is a GREAT way to add flavor to your veggies! I didn't have red onion so I used yellow onion but still DELICIOUS! I was looking for a way to add some dazz to my spinach without making it fattening. Thanks for this recipe!!

I adjusted this recipe slightly. I'm not a big fan of strong garlic flavor so I left out the fresh garlic and used 1 tsp of Mrs Dash Garlic and Herb seasoning. I added 1 cp sliced mushrooms and left out the onion. I also left out the salt, pepper and sugar. Once I put the spinach in I didn't cook it for more than about 2 min and it was almost over cooked in my opinion. I like the spinach just warmed but not really cooked. It was delicious!!
