Smoked Salmon & Watercress Salad With Red Onion-Caper Vinaigrette

Start with a salad of smoked salmon and watercress. Try to buy the commercial bagged watercress that already has been cleaned to speed things along, or you may substitute other mixed salad greens. (I like to make sure there are some bitter ones, such as radicchio and arugula, along with milder greens, such as butter lettuce or baby spinach.) Also, because this is such a simple salad, all the ingredients should be top-quality. So spring for the best smoked salmon you can find.

A fabulously different salad that serves twenty and is beautiful in a bowl. Lots of color and taste sensations. Radicchio, fennel, watercress, and pecans are tossed with a lovely balsamic vinaigrette studded with bits of dried cranberries. 

Avocado Corn Salad with Pine Nuts

Crisp romaine lettuce, kernels of tender corn, avocado slices, and cherry tomatoes are dressed with Caesar salad dressing, and sprinkled with pine nuts. Enjoy!

It's extremely important in any recipe using scallops to dry them well with paper towels before cooking them in a skillet or broiling. They retain water and pressing down lightly removes some of the water, allowing them to brown instead of stew.

White wine, butter, and shallots make a great sauce for scallops. This is easy and non-creamy for those that don't like cream sauces.
