1 pound Bob Evans® Zesty Hot Sausage Roll
1 (16 ounce) package VELVEETA® Pasteurized Prepared Cheese Product , cut up
1 (10 ounce) can diced tomatoes and green chiles, undrained
or 1 (16 ounce) jar of salsa

DIRECTIONS
Crumble and cook sausage in large saucepan over medium heat until browned. Drain on paper towel then return sausage to saucepan. Cut VELVEETA® cheese into cubes and add to sausage. Cook, stirring frequently, until cheese is melted. Stir in tomatoes.
Serve warm with tortilla chips.

Yep, an oldie but a goodie. I have made this for years. I also have, on occasion, left out the sausage. Also, instead of using salsa I sometimes just put a can of Rotel (diced tomatoes with chilies) in. What I do is put all ingredients into a small crock pot, turn on low and allow folks to dip at their leisure. Just a stir or two every so often keeps this in good shape.

Classic queso that we have enjoyed for years and years. We have always called it Jose Dip, after a Houston chef. We usually double the recipe in a crock pot on warm or low and the dip disappears at every party we have. Try hot breakfast sausage for more of a kick. You can also do 1/2 sausage and 1/2 ground beef. We have always used Rotel, one can of regular and one can of Extra Hot to 2 pounds of Velveeta. Hot and spicy...but we're Texans, what can I say...that's the way we like it! Yummy, yummy, yummy. Best with margaritas and homemade flour tortilla chips. ;)

I've made this many, many times. I always use rotel, but usually I leave out the sausage. Sometimes instead of sausage, I'll add a can of chili (with no beans). It's a perfect snack while watching the Titans play football :)

I used turkey sausage and the rotel...with reduced fat Velveeta. So easy and delicious! I love it! Thanks for the great recipe.

It's pretty good ..Next time I'll probably use ground beef . I used rotel (hot ) and Added a little milk and water because I thought the sauce was too thick

I thought this was a little too thick. I added 1 cup of whipping cream and a small jar of pimentos and the green chilies. This is definitely better the next day as the flavours blend the longer it sits in the refrigerator

Flavor was great, but it sure got cold fast, no one would eat it that way. I have a crockpot, but it wouldn't have worked on the coffee table (we had guests over for a movie). I need to invest in one of those heated chip and dip trays I guess. Anyway, everyone did like it a lot; I just had to make an awful lot of trips to the microwave...lol.

I love this growing up but could not remember the ingredients. The only thing I did to improve was after the sausage was cooked I ground it in the food processor. It gave the dip a great consistancy. THANKS
