I thought this was very tasty. I did substitute turkey sausage and, as suggested by another reviewer, added pecans and liked the idea of dried cranberries to try the next time. I will use this again and think it is a good winter and holiday side dish.

OMG, Mary! This was great! I had a granny smith apple on hand and tossed that in to. Very easy. Just one tip. If you are using store bought squash, they are wax coated. When you boil them to peel them the wax sticks to anything you put in the water and is diffucult to wash off. Next time I'll use a wooden skewer to handle the squash.

Yummy! I love squash and my husband dislikes all vegetables and he actually loved this! It was fast and easy. I used low fat sour cream and it tasted just fine! Next time I will add some bell pepers. The only change I made was to add like 1 cup of celery rather than 1/2 cup.

Wow, what a great recipe! Hubby never had acorn squash before, and he loved this. I used spinach/feta/garlic chicken sausage from Trader Joe's, and I think this would be excellent with any flavored sausage you can find.

Got this recipe mixed up with another... I mixed these ingredients with a broccoli/cheddar rice mix and a chopped broccoli head. I used hot Italian sausage and melted jack cheese in the broiler to finish. Easy and different, I'll make it again.

I made my recipe with jimmy dean hot sausage. It was way to rich. The recipe is fantastic though, I never knew you could cook a squash in the microwave so quickly. I've always used the oven for a half hour. Ten minutes made it perfect. I think we will try the maple sausage next time. Will probably be much better. I'm thinking of other things to add to it.

I've been making this for years. Sometimes I add a bit of chopped apple to the mix, sometimes mushrooms or dried cranberries. Pecans are good, too. This just tastes like fall--real comfort food.

I like this quick and tasty dish. Even my husband (a squash hater) likes it. I always mix in a handful of stuffing mix & broth and top with parmesan cheese. I use the oven to melt the cheese instead of the microwave.
