I needed something to do with too much summer squash that I had blanched and frozen from a pick-yourself farm we visited a few weeks ago. This was so easy and very good. I served it over white rice and added a big fat juicy Jersey tomato which I chopped up, to the pot which gave it some color. I think this is a good "as is" dish or easy to add more and more vegetables (next time I will try adding baby spinach) "as you like it".

this was really good - i didn't use the croutons, but I tossed it into some prepared quinoa - big hit! I also added some other spices to give it a little kick and used some spicy sage sausage (I like it a little spicy!)

This is the BEST Sausage recipe I have ever had!!!!! It was GREAT!! The only thing we did differently was we added a little seasoning salt along with the salt and pepper and omitted the cruttons. We served it on spaggetti noddles. It was a hit with the whole family!! As well as the friend's that were over. It will be in the family recipe book for a long tim!! Thank You!

I never cooked with squash before, so I decided to try this. Took a bit longer to cook the squash than the recipe states. I left out the croutons (hubby doesn't like them). Overall, this is pretty good.

Surprisingly good for such a simple recipe. I used leftover turkey italian sausage, so there was no fat to drain (I actually added a bit of olive oil). I also used leftover seasoned bread crumbs, to good effect. I'll definitely make this again, maybe with the tomatoes like the other reviewer suggested.

This is an absolutely delicious recipe. I doubled the recipe and used 1/2 reg. and half sweet italian sausage that I had on hand. I did about 12 or so cherry tomatoes cut in half at the end with the croutons and while the tomatoes cooked through the croutons got soft and fell apart, it was wonderful and my husband loved it. Will definitely be making this over and over again. Thanks for the great recipe!

This is the first review I have left and wanted to let everyone know that this is a quick and delicious weekday night recipe! My family was definitely impressed. I was able to find and use Campbell's Chicken Broth for Sodium- Restricted Diets, which didn't affect the yummy flavor whatsoever. I did leave out the croutons however. Used sweet Italian sausage and made white rice on the side. Thank you for sharing your recipe!
