INGREDIENTS
1 pound fully cooked kielbasa or Polish sausage, cut into 1/4-inch slices
2 (14.5 ounce) cans diced tomatoes, undrained
2 cups water
1 1/2 cups uncooked parboiled (converted) rice
1 cup salsa
1 medium onion
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
1 (4 ounce) can chopped green chilies
1 (1.25 ounce) package taco seasoning

DIRECTIONS
In a slow cooker, combine all ingredients; stir to blend. Cover and cook on low for 5-6 hours or until rice is tender.

Review is based solely on the SOs opinion; I do not do spicy! Had this waiting for him one evening when I wasn't home, and he loved it. I did make some changes; browned ground sausage and added my own seasonings, subbed some dried red chilies for the can of green, used regular brown rice (so added an extra cup of water), added a bit of frozen corn, used half a red pepper instead of a whole green, and cooked for about 8 hours. He actually called me just to say how good it was! Will try again, next time with the right ingredients! Thanks!

What an easy main dish, but certainly not inferior; we like this better than my more time-consuming old faithful baked Spanish Rice! I browned and drained a generous lb. of medium-hot bulk pork sausage, because that's what I had on hand, and to make it healthier, used 1 1/2 cups brown rice instead of converted. I used medium salsa, and it turned out perfect, not bland at all! When serving it, we like to sprinkle a bit of shredded lowfat cheddar or mozzarella cheese on top. Love this recipe!

I'm in the UK & couldn't find the Polish sausage. As a regular traveller to Spain. I added 1 large "Chorizo" a Spanish sausage & a pinch of saffron to this recipe. It was fantastic & well recommended Thank You

I prepared this dish exactly as the recipe specified. It was absolutely awesome! I am a stay at home house hubby, so I do all of the cooking. My wife went back for seconds of this dish. She never goes back for seconds. Great dish. Leftovers can be wrapped in a flour tortilla with cheddar cheese. Awesome!

This was sooo good!! To the poster who rated it low...you cooked it too long if your rice was mushy. Either that or did you possibly use instant rice? Mine cooked for 5 hrs. almost exactly and it was perfect. I used Uncle Ben's converted white rice. I expecially like this recipe because you can "heat" it to your personal preference. We like a little bite to our dish so I used the medium salsa. It was perfect.

This recipe was extremely easy to make. I made it exactly as called for and my family loved it. It's not very spicy. If you like spicier rice, you could add some jalapenos. And to add a little more flavor, you could substitute chicken broth for the water. Thanks for the easy good meal!

Great recipe. I used 3 cups of fresh chopped home grown tomatoes (instead of the canned tomatoes), and homemade salsa. I used rice pilaf (2 boxes) for the rice. I think next time will will use a bit more Kielbasa, maybe 1/2 pound more. I might brown it a bit on the stove first too, but its good either way. Even my 4 year old loved it!

Oh... I was hoping for better. Mine turned out really mushy and leftover was even worse. I think next time I'll stick with a stove top or baked version.
