This is truly a 30-minute meal. I used canned pinto beans with jalepenos and added some more hot sauce to my bowl, but extremely well received by my husband who ate two bowls.

Cheap, easy, filling, and yummy!! I increased the recipe to 8 servings instead of the default 2, which was just about right for a family of 5 (including hungry teens). When the recipe was increased, everything worked out proportionately except the family thinks it needs 2lbs of sausage instead of 1lb. (We used Turkey sausage to lower the fat content.) I added a few dashes of Franks Red Hot sauce to give it a bit of a kick. To make the recipe stretch further, we served the beans & rice mixture with warmed tortillas and a side of corn bread. We think it's a keeper!!

This recipe saved me from running out to the grocery tonight! I had MOST of the ingredients and it came out awesome! My husband is after 2nds already! BTW... I didn't have green pepper and I forgot to add the garlic, but it came out great!

YUM! We really loved this dish Thelma! I used smoked turkey sausage, two whole bell peppers, Rotel spicy diced tomatoes, pinto beans and seasoned canned pea beans. I wanted the mixture a little saucier so I threw in a can of tomato sauce. So quick and easy and pretty healthy to boot! Thank you so much!!

I made this (for 4 ) very quickly, using a whole chicken rope sausage. I did not let it simmer as long as suggested, and it was still very tasty. I used dried green pepper since I didn't have any. I thought it could have used just a bit more oregano, but still it was fast, easy, cheap, and delicious! I threw it on brown rice for an incredibly healthy meal.

This was surprisingly wonderful! The surprise was because its so simple and easy, yet tastes more complex. Only additions I made were some chopped celery and a couple of bay leaves. We had Mardi Gras early last night with a splash of hot pepper sauce on top and some garlic bread on the side.
