1 pound Italian turkey sausage links
4 cups spiral pasta
1/2 pound fresh mushrooms, sliced
1 large onion, chopped
1 medium sweet red pepper, chopped
1 medium green pepper, chopped
3 large garlic cloves, minced
1 tablespoon olive or canola oil
1 (26 ounce) jar meatless spaghetti sauce
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon pepper
1/3 cup crumbled feta cheese

DIRECTIONS
Place sausages in a large nonstick skillet coated with nonstick cooking spray.over and cook over medium heat for 12-14 minutes or until browned, turning twice. Cool; slice sausages and set aside. Prepare pasta according to package directions.
In same skillet, saute mushrooms, onion, peppers and garlic in oil until tender. Stir in spaghetti sauce, basil, oregano, pepper and reserved sausage. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes, stirring occasionally. Drain pasta. Serve sauce over pasta. Sprinkle with feta cheese.

Nutritional Analysis: One serving (1 cup meat sauce with 2/3 cup cooked pasta) equals 372 calories, 12 g fat (4 g saturated fat), 48 mg cholesterol, 1,106 mg sodium, 45 carbohydrate, 6 g fiber, 22 g protein. Diabetic Exchanges: 2-1/2 starch, 2 lean meat, 1 vegetable, 1 fat.

Delicious! I didn't have any jarred pasta sauce, so I used one can of regular tomato sauce and one can of diced tomatoes. I also used chicken sausage instead of pork sausage for lower fat - didn't affect the taste in my opinion, although my husband said it didn't taste quite as good as pork, but was a good, healthy substitute.

I made this for my boyfriend and we both loved it! I've made it several times since, and it's a yummy change from regular spaghetti & meatballs. The only thing I changed was I used goat cheese instead of feta (personal preference). I also simmered the sauce for about an hour (my grandma always taught me to cook the as long as possible!) This recipe is great because you can experiment and add so many different veggies - I've added eggplant, carrots, zucchini, etc. Simmering all those veggies and sausage gives your sauce a great flavor!

This was really good. The feta cheese really didn't help or hurt the dish, and my roommates actually didn't even use it, so unless you have it handy I would pass because that's a little cash I could have saved. Otherwise, really filling and delicious!!
