Ingredients

  • 1 1/2 cups uncooked elbow macaroni
  • 3/4 pound bulk Italian sausage
  • 1 small onion, chopped
  • 1/4 cup chopped green pepper
  • 1 (8 ounce) can tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese, divided
  • 2 tablespoons minced fresh parsley
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon pepper

Directions

  1. Cook macaroni according to package directions. Meanwhile, in a large skillet, cook the sausage, onion and green pepper over medium heat until meat is no longer pink; drain. Drain macaroni.
  2. In a large bowl, combine the macaroni, sausage mixture, tomato sauce, mozzarella cheese, 1/4 cup Parmesan cheese, parsley, garlic, oregano, salt, basil and pepper. Transfer to a greased 2-qt. baking dish. Sprinkle with remaining Parmesan cheese. Bake, uncovered at 350 degrees F for 20-25 minutes or until heated through.
