1 pound bulk pork sausage
1 medium onion, chopped
2 medium carrots, grated
1 medium green pepper, chopped
3 cups diced cooked potatoes
1/2 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS
In a skillet over medium heat, brown the sausage. Add onion, carrots and green pepper; cook until tender. Stir in potatoes, salt and pepper. Reduce heat; cook and stir for 20 minutes or until lightly browned and heated through.

I followed this recipe to the "T" and my family loved it. I also served with a side of scrambled eggs. Then for breakfast the next morning we wrapped the hash in a flour tortilla with salsa. Absolutely delicious!

This exceded my expectations by quite a bit. My daughter, who normally wouldn't touch a green pepper to save her life, ate three helpings and left nothing on her plate. The trick to making this good, I think, is to cook everything seperately (potatoes, vegies, meat) and then combine them and give it plenty of time to come together.

Great recipe! I did use raw potatoes and fry them until they were just about done. I also added some yellow squash and green onions. Then I also, baked it for 30 minutes so the potatoes would finish cooking. Then, top with cheese. YUM!

This was a HUGE hit at brunch. I microwaved the potatoes until the they were mostly tender, and then added them in at the end just to brown them a little. I also omitted the carrots.

It was a good recipe. It wasn't as good as I thought it would be. I might have added too much pepper, so it overpowered the dish, so that's my fault. I also added shredded cheddar to the top and melted it. I think some scrambled eggs would have helped give it a little more flavor. Still good though, and the family liked it.

My family loves this and asks for it regularly! The recipe is great as is, but to make it a bit healthier I use turkey sausage. I also add a few dashes of worcestershire sauce.
