A great hit on Christmas morning. My kids want more! I did not include mushrooms. I will make this ahead so they can warm the leftovers before heading off to school. A nice change from the cold cereal routine. Very easy!

Wonderful! I made half a batch and cooked it in an 8x8 pan and it turned out just great. I forget how long it took as I was paying more attention to the color and the firmness than the clock. I was a bit doubtful about the flour/butter mixture, but I stirred in the little crumbles a small amount at a time and it tasted fine. In fact, it was even a little hard to spot them in the final cooked casserole. I will be making this recipe again for sure!!

Absolutely the best egg type breakfast casserole ever! I made this for a ladies brunch and everyone wanted the recipe. I think it is the monteryjack cheese that gives this dish an unusually great flavor and texture.

This was delicious and was very well-received. I used cheddar cheese instead of Monterey Jack. I also used hot pork sausage. I think that next time I will mix the last four ingredients in with the rest of it. I wasn't crazy about the flour/butter clumps.

Love this, and I always get requests for the recipe. Very versatile. You can use bacon, different cheeses, veggies, whatever. I leave out the mushrooms and cut the chili peppers way back. Some reviewers commented about the flour mixture not incorporating well. That is really one of the things I like best about this recipe. The flour mixture is a little lumpy, and gives the whole casserole a nice texture.

Good but dough mix doesn't really mix into egg mix and comes out with lumps of dough in places. These lumps are not very good. Next time will try without dough mix.

We really really liked this egg dish. I used one full pound of hot sausage and then cut the chillies to one can. I used a total of 8 oz cheese, half sharp cheddar and half co/jack. I like that it was made the night before. I also made one with bacon and green pepper rather than the sausage and mushroom and it turned out yummy too. The only thing I was not crazy about was that the flour mixture was a bit difficult to incorporate. I wonder if I added the flour to the eggs and then just mixed int he butter it would be easier. All in all a good egg casserole that is not runny in the middle and much easier to make than a crusted quiche.

This recipe was great. I made it for Easter breakfast and it was a big hit! I did change the recipe a little...used 12 eggs, 1 lb. of sage sausage, and I chopped up 1 large green bell pepper and 1/2 a large onion and sauted them instead of using the green onions, mushrooms, and canned peppers. I also used 8 oz. of shredded sharp cheddar instead of the 16 oz. of jack cheese after reading the reviews that it was too cheesy. I used a pastry cutter to combine the flour mixture to make sure it wasn't lumpy, and it turned out wonderful! I'll definitely use this again. Thank you!!

Excellent breakfast casserole! Used a whole 1 pound tube of sausage. Was afraid that the cottage cheese would give it a weird texture & appearance, but it baked right in to the casserole! Not a huge fan of the mushrooms, next time will make with spinach & some red bell pepper. Yum!

bought this to a breakfast at work-everyone asked for the recipe. I was worried when I mixed the flour and butter together, but it blended with the egg mixture just fine. Thanks for the great recipe. I did have to cook mine for 10-15 minutes longer in order for it to set.

This is insanely good. didn't make it low fat, but would try cause I can imagine it would still be good. used whole 16 oz. ground breakfast sausage. had to replace 1 can of jalapenos for 1 can of chilies (still good with a little kick-I didn't mind). looked weird adding the crumbles of the flour to the egg mixture but once it baked up, it was very good. husband asked if there were biscuits in it. make sure you let it sit for 10 minutes or else it'll be too loose and hard to dish out. I also did let mine bake for maybe 10 minutes more cause it's had no browning on top after first 50 minutes.
