I was looking for something that didn't need to be prepared the night before, and this is it. My husband asked me to put this on my "make again soon" list. I didn't add the green pepper, I added some finely chopped onion to sprinkle over the egg mixture after adding to the pan, and sprinkled more cheese over the top. Hubby usually likes salsa with this type of dish, but decided it was great without it! I served grits and fresh fruit with this. Mmmmmm good.

Good unique side dish, especially for holiday meals. Convenient that they need to sit for a while after baking.

This was a great quick recipe for a church gathering. It turned out nice and flavorful. We did not find it to be too greasy. It was a great recipe in a pinch.

This was very good and the dish was completely gone. I did find it a little bit greasy though. I would recommend warming the sausage slightly on a paper towel before cutting it up to get rid of some of the excess grease.
