Original Recipe Yield 4 to 6 servings
 

Ingredients

  • 1 pound pork sausage
  • 1 (15 ounce) can whole kernel corn, undrained
  • 1 (14.5 ounce) can diced tomatoes
  • 5 potatoes, peeled and sliced
  • 1 onion, sliced into thin rings

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  2. Arrange potatoes in the bottom of the prepared dish, and top with onion rings. Spread corn and then tomatoes over onions. Arrange sausage over top. Cover.
  3. Cook for approximately 1 hour, or until potatoes are tender.
