I made this colorful, robust stew often when our three kids were living at home. Since it calls for lots of canned vegetables, it stirs up in a jiffy. It's versatile, too-you can substitute cubed turkey, chicken, ham or beef for the sausage. Plus, you can replace the beans with other vegetables of your choice.

If you can't stand the heat watched out for the chile peppers. Otherwise this easy-to-assemble dish is redolent of southern cooking, temperature and all. Try smoked andouille or smoked kielbasa sausage for a taste of the real thing. Serve with rice.

Italian sausage is stir-fried with peppers and mushrooms then served over pasta with a generous sprinkling of Parmesan cheese. My husband who loves Italian dishes was getting bored with the same ones, so I made this one day for dinner and the whole family loved it! I hope you will too!
