An excellent recipe! I added a can of italian stewed tomatoes (with the juice) and slightly reduced the amount of chicken broth. Was absolutely delicious!

This is the ugliest looking soup, but with great taste. Just close your eyes and enjoy. I used fresh spinach and sweet Italian sausage.

This soup was excellent with plenty of flavor. The only thing I changed was that I added 2 potatoes cut into small chunks. That really gave it what I was looking for.

I made this for a teacher luncheon and it was a huge hit. My family has requested it again, even our rather finicky 4 year old. My husband likes it because it has meat in it. Thanks for sharing this.

Yum. I doubled this recipe (used half mild & half hot sausage). A bit salty for our taste so I would suggest using salt-free chicken broth, though I did add vegatable base so that might be the culprit. Try this recipe...you'll make it more than once.

Yum! I made this with hot italian saugage for kick, and added some vegetable base for richer flavour. I added more onion and carrot as well. DELICIOUS. Going into rotation this winter, for sure!

This recipe was really filling. Our family really enjoyed this soup, even my 4 year old son. The only alteration I made was by adding 2 tbsp of ketchup to give it a little more flavour. It reminded me of an Italian wedding soup. I think that next time I may throw in some orzo pasta instead of the barley. This is definately a recipe that I will continue to put into our meal rotation.

My family loved it with the exception of my 2 youngest who are 2 and 4 but they are picky. My husband usually goes and adds things or seasonings during cooking but he didn't and he thought it was great. It is funny because most of them do not like spinach but they loved it in this. I am not a big sausage person but I enjoyed it too. Thanks for such an easy dinner that almost all of the liked! ;) Krissa
