After reading the reviews, I decided to use kale instead of spinach, which worked wonderfully. If you want to stick with the spinach, I would only add it during the last few minutes of cooking. The kale can go into the crockpot at the beginning.

Im very confused with this recipe. I love soups, I love barley, I love sausages... yet this soup tasted bad. I went by the recipe step by step. How could me outcome be so different then all the other high reviews? Really, Im left totally confused.

Wonderful soup. I tripled the barley. Used turkey sausage and added spice with lots of ground red pepper flakes and pepper. Used vegetable stock concentrate (which is high in sodium) so it was a little salty (but my mistake for not using vegetable broth). I will make this often. Wonderful cold weather hearty soup. Oh - used the crock pot for ease. Thanks for the recipe.

I forgot that this was ideally a slow cooker recipe and so I ended up making it on the stovetop instead when I was pressed for time. I still thought it came out pretty good, and I imagine it would be even better if the flavors had blended together all day. I liked this because with the spinach and barley and carrot (I actually tripled the amount of carrots) it felt "healthy" but the Italian sausage kept it from feeling TOO virtuous. I added substantially more of the Italian seasoning and barley than the recipe called for, as written it would have been a bit underseasoned for my taste.

AMAZING flavor! I used an entire onion, two carrots, and a full cup of hulless waxy barley. Because I used Hot Jimmy Dean sausage, I omitted the garlic and Italian seasoning. 4 hours in the crock pot was perfect. We like spice, and the Hot Jimmy Dean gave this soup the kick we were looking for.

I followed this recipe as witten but to be honest I was not a fan. The flavors just did not seem to complment each other. The over all taste was way to bland even after adding seasoning. Pretty sure this is something I will not make again.

Love this recipe!! Did increase the barley to 1/2 cup and used hot Italian sausage. Such a hearty flavorful soup. Will definitely make this recipe again!

Great flavor and variety of ingredients. We used frozen peas instead of spinach, adding them a couple of hours before eating so they didn't get mushy. I quadrupled the amount of barley.

If I could give 10 stars I would! We absolutely loved this soup. I used chorizo sausage and that gave it a nice little spicy flavor. This is a new favorite around here! Thank you!
