My mom's recipe only has 1 c. cheese & 3 c biscuit mix and I always thought they could be better... I can't swear I used the whole pound of cheese (used 2 handfuls per batch), but wow! These are AWESOME! I always make them with hot sausage but the decreased biscuit mix really makes the flavor stand out - they are PERFECT! I doubled the recipe, cooked them on a wire rack (as others had suggested) & cooked both batches at once at 400 for 15 minutes. They are to die for - not too dry, not too greasy, just right. Will most definitely make these again (probably this holiday weekend since this batch unfortunately is for a work luncheon). Hint: mixing is much easier if the sausage and cheese are at room temp. MAKE THESE - YOU WILL NOT REGRET IT!!!!!!

This is the same recipe I've used for years. There is no chance for dry sausage balls with this recipe because the mixture is just right. You will definitely need to increase the cooking time to about 20 minutes though.

These are so easy to make and they taste great. Everyone always loves them when I make them for family get togethers. Thanks for sharing.

I was very disappointed in this recipe. It was bland and blah. I even added the spicy sausage and a bit of garlic powder to the baking mix. But these tasted like balls of sausage-flavored bread, nothing exciting. I will not be making these again.

These are very good. I cooked (a mild version)for my daycare children and...brace yourself... I added 1/2 cup pureed spaghetti squash. DELICIOUS! You can't taste the squash at all, and they turned out very moist. This is great for serving children who do not like their veggies! They will never know.

Served these at a party. Most people enjoyed these, but mostly my husband, I think he ate a dozen of them himself. I only changed one thing in the recipe. I used 1 cup buttermilk baking mix and 1 cup crushed herb stuffing. I baked on a broiler as another reviewer suggested.

My family and I have been making sausage balls my entire life. They are always a hit and we make them every year for Christmas morning. One thing I do differently is I cook and crumble the sausage before adding to the dough. It really helps cut down on the grease but still leaves the flavor. Then just add about 1/4th cup water to the dough to help with moisture. I think they turn out much better pre-cooking the sausage.

I have been making this recipe for 30 years! I use Jimmy Dean sausage. I often roll out the balls & put them on cookie sheet, then put in the freezer. I leave them there till just frozen, then put in a gallon size bag and freeze. That way they don't stick together and you can cook as many as you like.

These are fantastic. I served them at a bridal shower several months ago. It takes awhile to get the mixture to combine but I think it's helpful to a Kitchenaid with the dough hook attachment. I like these best with Jimmy Dean HOT sausage. They freeze well (uncooked) also.

Mmmm. Yummy. Albeit, this is the first time I have ever had sausage balls. That's why the 4*, nothing to compare it to. But, I don't think I need to go looking elsewhere. Yummy and easy. My kind of dish!! =)

These are always a hit at work potlucks! My grandmother gave me this exact recipe one christmas and I have been making them this way ever since! Make sure you use good quality sausage (I use Jimmy Dean)- the cheaper the sausage quality the greasier the end result! I also prefer "hot" sausage- it really doesn't make the sausage balls spicy, just gives them a nice flavor!

The first time I made these I followed the recipe as written and I thought they were too dry. The next time, I used hot sausage, only 1 cup of biscuit mix and I used two cups of pre-packaged shredded chedder and liked them much better.

I've been making sausage balls for years - since I was a little girl! The only difference between my recipe and this one is that I use 3 cups of bisquick. I believe the extra cup makes the sausage balls seem a little less greasy, although while they are baking lots of greasy bubbles out of them, there's no avoiding that. They are so good! A definite Christmas tradition in my family!
